Midwinter Solstice Feast |
The Eceni Tribe A Midwinter Feast. Spit Roasted Honey Glazed Duck Take a fat Duck, pluck, draw and wash it, stuff it full of the stuffing below. Spit it and Roast very slowly before a charcoal fire, turn regularly and baste with a little Butter and Honey. Mushroom, Onion and Hazelnut Stuffing. Mix finely chopped Onions and Mushrooms in equal proportions, with a good tablespoon of Hazelnuts, add a little Stone-ground flour and milk to bind it. Cranberry and Apple Sauce. Mix sweet Apple, sliced fine with crushed Cranberries in equal proportions with very little water, stir over a slow fire. Unleavened Bread. Made with Olive Oil and Herbs, Stone-ground flour, Milk, very finely chopped Onion and a pinch of Salt. Extras. Sheep’s Cheese, Apples, Dried Plums, Dates, Honey Wine. Barley Ale.
